Sun Dried Tomato, Garlic & Parsley Spaghetti

This is the perfect Italian dish - delicious to eat and easy to make. I like to have it as a treat when I stay in.

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 2 servings

500g spaghetti
3-4 tbsps sun dried tomatoes
3 large handfuls of fresh parsley
4 x cloves garlic
1/2 cup olive oil
Splash of olive oil (for cooking pasta)
1/2 cup parmesan cheese
Salt and freshly ground black pepper, to season

Peel and finely chop the garlic
Wash and finely chop the parsley
Grate the parmesan
Chop the sun dried tomatoes into small pieces
Bring a pan of water to the boil and season with salt
Add the spaghetti and a splash of oil, then mix with a fork to separate. Cook the spaghetti according to packet instructions
Just before the spaghetti is die to be ready, add the olive oil to a frying pan and gently heat for a minute or two
Add the garlic and sundried tomatoes to the oil and gently fry for a few minutes until the garlic is golden brown (but don't let it start to burn)
Drain the spaghetti and pour into the frying pan
Toss the spaghetti in the oil, garlic and sundried tomato
Add most of the parsley and toss it through until even
Turn out onto 2 x plates or bowls
Generously add parmesan to each and serve with the rest of the parsley (or a fresh parsley leaf) on top
Season with salt and ground black pepper to taste
