Sunbutter Squares
This super simple snack bar doesnt require baking and is paleo, grain free, nut free and vegan! But most importantly is delicious. I dont like things too sweet so used dark chocolate to top my squares. If you have a sweeter tooth, use milk chocolate chips or add more coconut sugar if you are making the chocolate yourself.
Preparation Time: 15 minutes
Cooking Time: 2 hours in the fridge
Makes: 24 servings
Ingredients
1 cup Sunbutter (sunflower seed butter)
1 cup coconut flour
1 cup almond flour
1/2 cup coconut sugar
1/2 tsp sea salt
1/2 tsp cinnamon
1/4-1/2 cup almond milk
For the Dark Chocolate
1 cup coconut oil, melted
1.5 cup cacao powder
1/2-3/4 cup coconut sugar
Or 1 cup dark chocolate chips
Method
In a large bowl combine the coconut flour, almond flour, coconut sugar, sea salt and cinnamon. Mix until combined.
Stir through the Sunbutter until mixed in. The mixture should be quite crumbly. Add the almond milk, one tablespoon at a time, until a very dense mix is formed.
Evenly press the mixture into a large baking dish and set aside.
To make the chocolate simply put the oil, cacoa and sugar into a small pot over a low heat and stir until combined.
There is something very satisfying about making your own chocolate.
Once melted pour the chocolate over the sunbutter base.
Pop the dish into the fridge for 2 hours to set.
Cut into bars or squares and enjoy for a up to a week.
NOTE: In the photos I had made a half recipe.
Regular chocolate chips and milk can be used for non vegans.
Sunbutter can be swapped for tahini, peanut butter,
walnut butter or any other nut or seed butter!
Store in a sealed container in or out of the fridge.
