Sundried Tomato Anchovy Crostini

When visitors arrive unannounced, having a quick and easy appetiser you can pull together in a few minutes will always impress.

Packed full of Italian flavours, the salty anchovies work really well with the sundered tomatoes. Torn, fresh basil leaves add just the right amount of freshness to this Italian classic.

Preparation Time: 10 minutes
Cooking Time: 1 minute toasting
Makes: Serve 1 or 2 per person as an appetiser.

Ingredients
Ciabatta (Italian bread)
Garlic
Sundried tomatoes in olive oil
Tinned or jar anchovies
Basil
Black pepper

Method
  • Slice the ciabatta about 1.5cm thick.
  • Lightly toast on both sides.




  • Peel a clove of garlic and rub over one side of each ciabatta slice. As you rub over the garlic it will finely grate against the crusty toast, releasing it's potent flavour.
  • Slice up the sundried tomatoes and lay over the ciabatta. You can also drizzle a little of the olive oil the tomatoes have come in.
  • Finely chop and sprinkle over anchovies. They are packed full of flavour and very salty so you only need a little.
  • Finish by grinding over black pepper and scattering some torn basil leaves.
