Sundried Tomatoes Olives Couscous Salad

Couscous salad are so easy to make and they are good cold or warm. Try this couscous salad recipe with sun-dried tomatoes & anchovy stuffed green olives.



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
2 cups vegetable stock
2 cups couscous
1/4 cup sun-dried tomatoes, chopped
1/4 cup anchovy stuffed green olives, chopped
1 tablespoon butter
salt & black pepper

Method
  • In a stockpot, bring 2 cups of vegetable stock to the boil.



  • While stirring, pour in the couscous.



  • Keep stirring until the stock are completely absorbed.



  • Add in the chopped sun-dried tomatoes and anchovy stuffed green olives. Mix well.



  • Add in the butter, mix through. Season with salt and black pepper.



  • Use the fork to separate the grains. Serve warm or cold.
