Super Grain Bread

I made this bread with all sorts of different healthy grains and seeds, including many that are considered 'super foods' such as chia seeds and teff. Teff is a grain from Ethiopia and is full of iron, while chia contains lots of B vitamins.

Preparation Time: 1 hour 25 minutes
Cooking Time: 40 minutes
Makes: 1 loaf

Ingredients
200g rye flour
200g white bread flour
100g wheatgerm
100g porridge oats
100g teff
50g polenta
20g chia seeds
7g fast action yeast
½ tsp salt
500ml water

Method



  • Mix all the dry ingredients together.



  • Gradually add the water to form a dough.



  • Knead for ten minutes and then prove for about an hour.



  • Score the bread using a knife.



  • Bake in an oven pre-heated to 200 & #3872 ;C/ 180 & #3872 ;C fan/350& #3872 ;F/6 Gas.
