Super Healthy Zucchini Bread

This zucchini bread recipe has twice as much zucchini and half the amount of sugar and oil as normal recipes. It is healthy, light and most importantly super delicious.

Fresh from the oven.

Preparation Time: 10 minutes
Cooking Time: 60 minutes
Makes: 10 servings

1.5 cups wholemeal SR flour
2 medium zucchini
3/4 cup honey (or sugar or apple sauce)
1/2 tsp baking powder
1.5 tsp cinnamon
1/2 tsp salt
2 eggs
1/4 cup oil
1.5 tsp vanilla essence
3/4 cup walnuts

Preheat the oven to 180C.
Mix all the dry ingredients in a bowl.

Dry ingredients.

Grate the zucchini, squeeze well and mix with wet ingredients in another bowl.

2 zucchinis or 2.5 cups

Combine the two and stir in the crushed walnuts.
Pour into a greased bread pan.

Ready to bake

Bake in the oven for 40-60 mins, until the top is spongy and a butter knife comes out clean.
Allow to cool then cut into slices and serve warm plain or with butter, honey or yogurt.

Alternative to the Walnuts l would consider Peacans unsalted . I was wondering if this can be sliced and toasted ? It could have spread of Cottage Cheese or Ricotta Cheese spread ? Lee
Could almond meal be used in place of flour? Granddaughter needs gluten free and dairy free.
Hello, I have not tried it with almond meal but I don't see why not! Can check the proper ratio for wheat flour to almond meal and let me know how it goes.
I was so inspired to make this (or to get my daughter to make it), after we were given some home grown zucchini. We actually used rice bran oil and added some chia seeds (LSA) would be great too! WELL, it was so good. We cut it into chunks and froze what we hadn't eaten already; ready for that 'I feel a sweet craving coming on' moment, but it's a healthy sweet munchy!!! You reminded me, how much I love things like this; sweet, nutty, morish, healthy and tasty. Great for high school lunches too, let alone adult nibblies. c&c
