Super Healthy Zucchini Bread

This zucchini bread recipe has twice as much zucchini and half the amount of sugar and oil as normal recipes. It is healthy, light and most importantly super delicious.

Fresh from the oven.


Preparation Time: 10 minutes
Cooking Time: 60 minutes
Makes: 10 servings

Ingredients
1.5 cups wholemeal SR flour
2 medium zucchini
3/4 cup honey (or sugar or apple sauce)
1/2 tsp baking powder
1.5 tsp cinnamon
1/2 tsp salt
2 eggs
1/4 cup oil
1.5 tsp vanilla essence
3/4 cup walnuts

Method
  • Preheat the oven to 180C.
  • Mix all the dry ingredients in a bowl.

  • Dry ingredients.


  • Grate the zucchini, squeeze well and mix with wet ingredients in another bowl.

  • 2 zucchinis or 2.5 cups


  • Combine the two and stir in the crushed walnuts.
  • Pour into a greased bread pan.

  • Ready to bake


  • Bake in the oven for 40-60 mins, until the top is spongy and a butter knife comes out clean.
  • Allow to cool then cut into slices and serve warm plain or with butter, honey or yogurt.

  • Enjoy.
