Swedish Almond Paste Apples

I found this recipe in my mother's old cooking book which she brought with her from Europe.

It is unusual in that she has very few desserts in the book, however I trust I have translated this correctly from the German it was written in, as it was such a great taste sensation!

I used Granny Smith apples as they are not so sweet, and the combination of these tart apples, and the sweet almond paste, is a delightful one.

It is rather an unusual looking dessert to serve to visitors, and mine were very taken with the look AND the taste!

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 3 servings

Ingredients
3 apples -I used Granny Smiths
1 tbsp melted butter
4 tbsp bread crumbs -Panko if possible

For the almond paste
¾ cup almonds
¼ cup sugar
1/8 cup water
½ egg white
Few drops of almond extract (optional)

Method
  • Preheat the oven to 160° fan forced.

  • In a food processor, grind the almonds (not too fine),

  • Add the sugar and blend until well mixed.

  • Add the water, egg white and almond extract.


  • Peel the apples, and if you have an apple corer/slicer, cut the apple into 8.
  • Leave a bit of the peel on the bottom as the apples will not separate totally then


    Apple is held together at the bottom by the skin


  • If you do not have one of these gadgets, core the apple, and slice into 8 sections, taking care not to cut through the bottom as this makes it easier to assemble.

  • Line a baking pan with baking paper.

  • Put some of the almond paste between each piece of the apple.


  • Close the apple up by making the pieces stick to each other. This in turn, will again look like a whole apple.
  • Dont spread it too thick or you will have trouble closing the apple


  • I then put the remainder of the almond paste mix into the middle of the apple.

  • Place apples on the baking dish, brush with the melted butter and coat with the bread crumbs.


  • Put in the oven and bake for about 15 minutes.

  • Delicious and also great to eat cold on future days.
