Sweet Almond Cream

This sweet almond cream is delicious and I love to eat it just with some plain crackers. Get creative there are so many things you can do with this. It's also a good replacement for a nut butter in a sweet recipe.
My sweet almond cream ready to serve.

Preparation Time: 15 minutes
Makes: Appeoximately 200g

Ingredients
1 cup of almond skin off
2 tablespoons of water
3 tablespoons of coconut oil
4 tablespoons of organic panela (evaporated cane juice)
1 tablespoon of lime juice
Pinch of salt

Method
  • For this you need to soak the almonds. Overnight is best but you can soak them in boiling water for one minute. I've adapted a recipe I found online and it said to soak the nuts and remove the skins. As I only soaked them for one minute in the boiling water it was hard to get to skin off so I left it on. This is why I suggest buying nuts that are already skinless.
  • Nuts soaking in hot water

  • Add all other ingredients to a bowl while nuts soak for 1 minute
  • All other ingredients in the bowl

  • Add nuts to the rest of the mixture and stir to through
  • Add to a processor or a stick blender bowl and blitz until smooth and it's ready to serve.
  • Place in a glass jar or clean bowl and cover and place in the fridge until your ready to use it.
  • My almond cream made with skin on time to bottle it up and into the fridge
