This was my first attempt at making a cumquat chutney. I was fortunate enough to receive a huge bag of these little delicacies from a friend. It was suggested that I make jam, but I wanted something that is neither too sweet nor very sour. Hence the idea of cumquat chutney! These make a great gift in a decorative jar.
Preparation Time: 30 minutes
Cooking Time: 45 minutes
Makes: Approximately 2 cups
Ingredients
350 gram cumquat
1 cup sugar
1/2 cup dried currants
1/4 teaspoon ground pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon chilli powder (optional)
1 teaspoon roasted ground cumin seeds
Method
Wash and quarter cumquat lengthwise. Take out all the seeds.
Combine all ingredients in a heavy medium saucepan.
Boil the mixture until sugar dissolves and cumquat skin is tender.
The sauce will appear thick now.
Let it cool and then transfer them to airtight containers.
