A succulent sweet and sour prawn dish served on a bed of lemony rice accompanied by a green salad.

Makes: 5 servings
Ingredients
500g king prawns
3 tbsp tomato puree
1 onion
1tsp tamarind pulp
1 tsp mustard seeds
1 tsp sugar
1 bunch fresh coriander leaves
1 green chilli (optional)
1 tsp ginger and garlic paste
1 tbsp olive oil
1tsp paprika powder

Method
Marinate prawns in 1tsp paprika powder, 1 tbsp lemon juice and salt for 30 minutes.

Grind tomato purée and onion to make a smooth paste.
Heat the oil in saucepan and pour in the tomato mixture.
Add mustard seeds, tamarind pulp, sugar, salt and paprika powder, stir and leave to simmer on low heat for a few minutes.
Meanwhile, deep fry prawns until pinkish in color.
Add prawns to the tomato mixture and leave to cook for five minutes.
When done, garnish with chopped coriander leaves and green chilli.
Ingredients for lemony rice
1 cup pre-cooked rice
Juice of 1/2 lemon and lemon rind
1 tsp butter
1 tbsp chopped coriander leaves
1 dried chilli
Method
Give it a quick stir and sprinkle with lemon juice, lemon rind and chopped coriander leaves.
Take off the heat and serve hot with prawns and green salad.
