Sweet and Sour Rice

This is a healthy recipe as it has the vegetables in it and it only dirties one pot!

Easy to make, it is also delicious.

I served it with my Russian salmon filo pastry.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4 - 5

Ingredients
1 cup cooked brown rice (about a ½ cup raw)
¼ cup unsweetened pineapple juice
½ tsp ginger, grated
½ onion, chopped
½ cup raisins
½ cup celery
½ cup red and green capsicum, chopped
½ carrot, grated coarsely
¾ cup pineapple pieces
¼ cup parsley, chopped
Bit of cumin

Method
  • Put the pineapple and rice in a wok.

  • Add the pineapple juice, ginger, onion and raisins. Turn on the heat.


  • When the liquid starts to boil, add the pineapple.


  • Then add the rest of the ingredients and stir.


  • Cook for about 5 minutes and serve.

  • I served it with my salmon in filo.
