Sweet and Sour Rice
This is a healthy recipe as it has the vegetables in it and it only dirties one pot!
Easy to make, it is also delicious.
I served it with my Russian salmon filo pastry.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4 - 5
Ingredients
1 cup cooked brown rice (about a ½ cup raw)
¼ cup unsweetened pineapple juice
½ tsp ginger, grated
½ onion, chopped
½ cup raisins
½ cup celery
½ cup red and green capsicum, chopped
½ carrot, grated coarsely
¾ cup pineapple pieces
¼ cup parsley, chopped
Bit of cumin
Method
Put the pineapple and rice in a wok.
Add the pineapple juice, ginger, onion and raisins. Turn on the heat.
When the liquid starts to boil, add the pineapple.
Then add the rest of the ingredients and stir.
Cook for about 5 minutes and serve.
I served it with my salmon in filo.
