Sweet and White Potato Skins
Baked potato skins are a classic American dish that I have made a bit healthier with some homemade
beans , greek yogurt and sweet potatoes. This dish is easy to make and great for a filling and warming lunch or dinner.
Preparation Time: 10 minutes
Cooking Time: 90 minutes
Makes: 2 servings
Ingredients
1 Sweet potato
3 White potatoes
2 Servings of
beans
1 cup shredded cheese
4 tbs Greek yogurt (or sour cream)
1 spring onion
1 tbs oil
1 tsp salt
1 tsp chilli flakes
Method
Wash the potatoes, rub them with oil and salt, wrap them individually in foil and place them in a 170C oven for 60-70 minutes depending on the size of the potatoes.
Meanwhile if you haven't already made your beans do it now.
Once the potatoes are cooked through and can be pierced with a skewer, remove from the oven, unwrap and leave to cool. Leave the oven on.
Once you can handle the potatoes cut them in half and scoop out the flesh. Leave just enough so the potatoes keep their shape and can hold the bean mix to come.
Ladle the bean mix into the potatoes and scatter with cheese. Return to the hot oven.
Bake for another 10 minutes or so until the cheese is melted and the beans are hot through.
Serve with a dollop of yogurt, some snips of spring onion, chilli flakes and a side salad.
