Sweet Baked Sweet Potato

Sweet potato is so sweet that it just makes sense to pair it with other sweet ingredients. I've taken the idea of a classic baked potato but stuffed my sweet potato with healthy dessert/breakfast ingredients. This recipe is great for any meal, I often have it for breakfast, afternoon tea or dessert!

Sweet, sweet potato absolute bliss.

Preparation Time: 5 minutes
Cooking Time: 60 minutes
Makes: 2 servings

1 Large sweet potato
1 C Greek yogurt
1/4 C raspberries
1/4 C blueberries
1 Tsp honey
1/2 Tsp cinnamon
1 Handful of raw nuts

Cut the sweet potato in half and wrap in foil with 1 tsp of water and bake in a moderate oven for 1 hour.

It will be very soft and gooey.

Unwrap your sweet package and put half the sweet potato in each bowl, slit the middle.

Ready to load up with goodies.

To each half sprinkle with cinnamon and dollop on Greek Yogurt.

Tumble on the berries.

These berries were frozen, I left them overnight to defrost so they would form their own syrup.

Dot on your favourite nuts (or nutbutter).

Walnuts, cashews and almonds.

Finish with a drizzle of honey.

Enjoy warm.
