Sweet Baked Sweet Potato

Sweet potato is so sweet that it just makes sense to pair it with other sweet ingredients. I've taken the idea of a classic baked potato but stuffed my sweet potato with healthy dessert/breakfast ingredients. This recipe is great for any meal, I often have it for breakfast, afternoon tea or dessert!

Sweet, sweet potato absolute bliss.


Preparation Time: 5 minutes
Cooking Time: 60 minutes
Makes: 2 servings

Ingredients
1 Large sweet potato
1 C Greek yogurt
1/4 C raspberries
1/4 C blueberries
1 Tsp honey
1/2 Tsp cinnamon
1 Handful of raw nuts

Method
  • Cut the sweet potato in half and wrap in foil with 1 tsp of water and bake in a moderate oven for 1 hour.

  • It will be very soft and gooey.


  • Unwrap your sweet package and put half the sweet potato in each bowl, slit the middle.

  • Ready to load up with goodies.


  • To each half sprinkle with cinnamon and dollop on Greek Yogurt.



  • Tumble on the berries.

  • These berries were frozen, I left them overnight to defrost so they would form their own syrup.


  • Dot on your favourite nuts (or nutbutter).

  • Walnuts, cashews and almonds.


  • Finish with a drizzle of honey.

  • Enjoy warm.
