If you love stir fries, this noodle dish is sweet and spicy at the same time. Use any vegetable you like and this dish will come together very nicely. I used pumpkin, red onion, garlic, zucchini, and red capsicum; whatever was at hand! I used a sweet chili paste and some fried tofu which I bought from an Asian grocery store. The noodles are thin rice noodles but you could use Pad Thai noodles, Flat rice noodles or Egg noodles. The sauces I use are oyster sauce and chili paste which blend together really well to create a lovely noodle stir fry.
1 large green zucchini
Half a red capsicum
1 red onion
2 cloves of garlic
1 butternut pumpkin
A pack of rice noodles
Two tablespoons of chili paste
2 tablespoons of oyster sauce
Slice up onion, zucchini, pumpkin, capsicum and carrots.
Fry up onion on olive oil.
Add the rest of the vegetables and two cloves of garlic (crushed in the garlic crusher).
Add the chili paste and oyster sauce.
Add the noodles and stir through until the vegetables and noodles are cooked through.
