Sweet Chili Turkey Stir Fry
I bought some turkey mince and fancied doing something other than burgers. This stir fry turned out to be a tasty, healthy alternative. I will be making it again, very soon.
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Serves: 4
Ingredients
450g lean turkey mince
1 onion
3 cloves garlic
½ sweet pepper
½ zucchini
1 stick celery
4 mushrooms
1 tbsp dried oregano
4 tbsp sweet chili sauce
3 tbsp Worcestershire sauce
1 cup rice
2 tbsp vegetable oil
Salt
Pepper
Method
In a small pan combine the rice with 2 cups of water.
Bring to the boil then reduce heat, cover and simmer until cooked.
In the meantime, dice all of the vegetables except the mushrooms.
Heat the oil in a large wok then add the vegetables.
Sprinkle in the oregano and fry for 3 minutes.
Stir in the mince and fry for 8-10 minutes until cooked.
Add a generous amount of salt and pepper.
Add the worcestershire sauce.
Thinly slice the mushrooms, add to the wok and fry for 2 minutes.
Finally add the rice to the wok along with the sweet chili sauce and stir thoroughly.
Serve immediately.
