Sweet Chilli Chicken and Cashew Stir Fry

This stir fry is a yummy mid week meal. I like to make a large batch of it and freeze the chicken and vegetables in small portions. I add the noodles later, as to avoid spoiling them when defrosting.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 5 servings

500g chicken thighs
cup of cashews
1kg stir fry vegetables
1 heaped tbs crushed garlic
cup of sweet chilli sauce
2 tbs soy sauce
1 pkt 400g Hokkien noodles
Olive oil

To prepare the chicken, cut off any excess fat or skin.
Slice the chicken.
Heat the wok and lightly toast the cashews. Take them out of the wok.

In the oil brown the chicken and cook off the garlic. `
Add the vegetables and cashews.

Put the lid on the wok and allow the vegetables to steam.
Stir in the sweet chilli and soy sauce and return the lid.

Boil some water and put it into a bowl. Place the noodles in the bowl and gently stir until the noodles have separated and heated through.
Stir the noodles into the stir fry.
