This simple recipe makes for an incredibly fresh dipping sauce. It celebrates the four pillars of Thai flavours, sweet, sour, spicy and salty, and will electrify your tastebuds. The dipping sauce is a perfect accompaniment to any type of fried Thai food.
Preparation Time: 7 minutes
Cooking Time: 20 minutes
Makes: Approx 10 Serves
Ingredients
2-3 fresh small red chillies
2-3 tablespoons white vinegar
½ cup fresh pineapple pieces
Coriander fronds for garnishing
Spring onion for garnishing
Method
Blend chillies, pineapple pieces and garlic, or use a mortar and pestle, which works well for this recipe.
Place mixture into a medium saucepan.
Add water and sugar, turn the heat to high and bring to the boil.
Reduce heat and simmer until the mixture thickens.
Add salt to taste and vinegar and simmer for a further 2 to 3 minutes.
Allow to cool before serving into a warm bowl.
Garnish with fresh coriander and chopped spring onion.
