Usually considered a savoury dish for a main meal, the pistachio risotto makes a sweet pudding.

Ingredients
400g arborio rice
150g pistachios
100g margarine
700ml hazelnut milk
300ml orange juice
1 tbsp golden syrup
1 tbsp muscovado sugar
2 tbsp cream cheese
2 tbsp plain yoghurt
2 tbsp coconut oil
Method
Fry the rice in coconut oil, then gradually stir in the milk and juice.
Stir continuously and vigorously until the liquid had been absorbed.
Stir in the margarine, yoghurt, sugar, syrup, and cream cheese until everything has combined.
Remove from the heat and stir in the pistachios.
