Sweet Potato and Avocado Salad

A simple lunch idea or a perfect accompaniment to a dinner dish.



Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes: 4 servings

Ingredients
1kg of sweet potato, peeled and diced into 3cm pieces
3 tbsps of olive oil, extra virgin
2 garlic cloves, crushed
1 bunch asparagus, woody ends trimmed, diagonally cut into 5cm lengths
100g snow peas, trimmed
4 rashers of bacon, diced
2 tbsps of red wine vinegar
1 tbsp of wholegrain mustard
1 ripe avocado, halved, stone removed and diced
40g baby rocket leaves



Method
  • Preheat oven to 220C. Combine sweet potato, 1 tbsp of olive oil and the garlic in a large roasting pan.
  • Bake in preheated oven, turning occasionally, for 25 minutes or until golden brown and tender
  • Meanwhile, cook the asparagus and snow peas in a saucepan of boiling water for 2 minutes or until bright green and tender crisp. Drain well and rinse under cold water to stop cooking.
  • Cook bacon in frypan, until slightly crispy.
  • Whisk together the remaining oil (2 tbsps), red wine vinegar and wholegrain mustard in a small bowl.
  • Once sweet potato is cooked, place in a large serving bowl with asparagus, snow peas, avocado and rocket. Drizzle with dressing and gently toss until just combined.
