Sweet Potato Carrot Cakes

These fried patties can make your side vegetables a bit more interesting in a main meal.

Preparation Time: 25 minutes
Cooking Time: 6 minutes (per cake)
Makes: 12 servings

Ingredients
200g carrot
200g sweet potato
100g wholemeal plain flour
1 onion
3 eggs
2 tsp parsley
1 - 6 tbsp cooking oil (deepening on how many you cook in each batch)


Method



  • Grate the carrot and sweet potato.



  • Chop the onion and mix in with the other vegetables along with the parsley.



  • Beat in the eggs and then divide the mixture into twelve and flatten them slightly into patties.



  • Coat the patties in flour.



  • Fry the patties in batches for three minutes on each side, using one tablespoon cooking oil for each batch.
