These fried patties can make your side vegetables a bit more interesting in a main meal.
Preparation Time: 25 minutes
Cooking Time: 6 minutes (per cake)
Makes: 12 servings
Ingredients
200g carrot
200g sweet potato
100g wholemeal plain flour
1 onion
3 eggs
2 tsp parsley
1 - 6 tbsp cooking oil (deepening on how many you cook in each batch)
Method
Grate the carrot and sweet potato.
Chop the onion and mix in with the other vegetables along with the parsley.
Beat in the eggs and then divide the mixture into twelve and flatten them slightly into patties.
Coat the patties in flour.
Fry the patties in batches for three minutes on each side, using one tablespoon cooking oil for each batch.
