Sweet Potato Chickpea Balti
Balti is a lovely Indian-inspired (debatably) curry sauce, that while not too spicy, adds a warm combination of tomatoes, mixed spices, and capsicum to the table.
Here I have done a vegan and vegetarian friendly dish that utilises the textures and absorbency of the sweet potato and chickpeas, but can easily be done with chicken or meat.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 5 servings
Ingredients
1 tbsp olive oil
2 onions, thinly sliced
600g sweet potato, cubed
5 tbsp balti sauce
400g tin crushed tomatoes
400g can chickpeas, rinsed, drained
5 pita breads, to serve
Method
Heat the oil in a large saucepan. Once warm, toss through the onion and cook until lightly browned.
Meanwhile, place the sweet potato in a microwaveable bowl with 2 tbsp water, and cook on high for 4 minutes or until tender. Drain, and add to onion mixture.
Add and stir through the balti sauce, tomatoes and chickpeas, bringing to a boil.
Cover and simmer for 10 minutes, or until all vegetables have softened and cooked through.
Gently heat through the pita breads and serve together warm.
