Sweet Potato Coconut Cake
A refreshing lightly spiced cake that goes well with a cup of tea.

Makes: 9 servings
Ingredients
500g sweet potato
170g self-raising flour
55g cornflour
1 tsp cinnamon
1 tsp ground ginger
40g coconut oil
45ml olive oil
2 tsp Truvia sweetener (or 65g caster sugar)
20g soft light brown sugar
2 eggs
100g desiccated coconut
75g icing sugar
35g butter
Method
Chop the sweet potato and steam for about 10 minutes or until soft.
Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/375 & #3872 ;F/5 Gas.
If the coconut oil is solid, melt it by putting it in the microwave for a few seconds, then mix in the olive oil, light brown sugar, and sweetener/caster sugar.
Puree the sweet potato in a food processor by adding in the oil mixture and eggs.
Mix the two flours with the spices and desiccated coconut.
Fold the flour mixture into the sweet potato mixture, and then pour into two square baking trays.
Bake in the oven for half an hour, and then allow to cool.
Cream the butter with icing sugar, then spread over one of the cakes.
Layer the other cake on top, and decorate with any leftover buttercream.
