Sweet Potato Hummus

This version of hummus is delicious and sweet, making it a great accompaniment for meat dishes, as a spread on a sandwich or as a dip.



I don't always measure everything when I cook, so these measurements are approximate. See what works best for you by taste, especially as you may end up with a different amount of sweet potato. Be careful with the amount of water; you may end up needing more or less depending on the amount of sweet potato and the quality of your blender.



Preparation Time: 10 minutes
Cooking Time: 35-40 minutes
Makes: 1 1/2 cups

Ingredients
1 medium to large sweet potato
1 tbsp tahini
1 tbsp rosemary
Juice of half a lemon
1 garlic clove
1/2 tsp paprika
1/2 tsp turmeric
1 tbsp water
Salt
Pepper

Method
  • Preheat oven to 200°C.
  • Wash the sweet potato and cut into pieces, about 2cm cubes. Bake in oven for 35-40 minutes, or until soft. Leave to cool.
  • Meanwhile, finely chop the garlic and rosemary. Place in a food processor with the other ingredients. Chop the sweet potato into smaller pieces (leaving the skins on) and add to the processor.




  • Blend until desired consistency is achieved.
