A delicious buttery mash that is full of veggies, texture, and flavour.

Ingredients
500g sweet potato
150g tiger/king prawns, cooked
100g margarine
120g brussels sprouts
45g brown shrimp, cooked
5 garlic cloves
1 onion
1 tbsp dried parsley
Method
Chop the sweet potato and steam for about twenty minutes or until soft enough to pierce a fork through.
Place the sweet potato in a food processor with the garlic, parsley, and margarine to turn into a puree.
Chop the onions and brussels sprouts, and steam for about ten minutes or until soft enough to pierce a fork through.
Pre-heat oven to 180 ༠C/ 160 ༠C fan/ 375 ༠F/ 5 Gas.
Stir the veg, prawns, and shrimp into the sweet potato mash.
Bake in the oven for fifty minutes.
