This is a delicious, healthy and colourful version of your standard potato mash. We serve it alongside roast chicken, sausages or osso bucco (pictured below).
Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 8 as a side
2 large sweet potatoes
1 tbsp butter
Peel the sweet potato and roughly chop into small pieces.
Place in a large pot and fill with enough water so the sweet potato is covered. Bring to a boil over a high heat, then remove the lid and leave for 15 minutes or until the sweet potato is cooked through.
Drain the sweet potato and mash in the pot using a potato masher. Add the butter.
Stir through the butter, which should melt into the sweet potato. Season with salt and pepper.
