Ingredients
1 sweet potato
1 egg
25g walnuts
20g currants
2 tbsp clear honey
¼ tsp ground cinnamon
¼ tsp bicarbonate of soda
Method
Pre-heat the oven to 190 ༠C/ 170 ༠C fan/375 ༠F/5 Gas.
Using a spiraliser, spiralise the sweet potato.
Put the sweet potato spaghetti in a food processor and pulse so that it looks like rice.
Beat in all the other ingredients.
Push the mixture into muffin cases and then bake in the oven.
