Sweet Potato Noodles with Kale and Bacon

I have not eaten kale before and although I found the actual kale a bit tasteless the other things I put in this recipe, made the dish a worthwhile one, and one that I will make again.

It is a healthy meal or accompaniment, and the bacon can be left out to make it healthier. Instead of using empty carbs, which pasta is, I have used sweet potato as the noodles.

This is one of the recipes I will "keep" and make again.

Preparation Time: 20 minutes
Cooking Time: 15 - 20 minutes
Makes: 4 servings

Ingredients
2 - 3 short cut bacon, cut into small pieces
450 g sweet potatoes, peeled
2 small eggs, beaten
½ cup Parmesan cheese, grated
1 tbsp olive oil
1 clove garlic, crushed
About 4 cups kale, chopped

Method
  • Cook the bacon pieces until they are brown, and add the garlic for the last minute or so..

  • Using a spiraliser or a julienne cutter, or an ordinary vegetable peeler, cut the sweet potatoes lengthwise into long, thin strands. These are then the "noodles".


  • Boil some water and drop these sweet potato noodles into it for just a minute.


  • Keep less than ¼ cup of the water they were boiled in and discard the rest, thereby draining the noodles.

  • Return them to the pot, but not yet on the heat. Add the reserved water, eggs, Parmesan, a bit of salt and pepper to taste, and gently toss using tongs.

  • Add the chopped kale to the bacon pieces and cook, stirring, until it has wilted - only about 2 - 3 minutes.


  • Add this mixture to the noodles, put on a low heat, and gently toss to combine.


  • Cook for a few minutes only and serve with more freshly ground pepper.
