
Plated sweet potato pancakes
I had nothing for dinner, and it was my low fat diet day which I do once a week.
So I looked around the pantry and fridge and adapted this recipe with things I had.
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Makes: 2 pancakes
Ingredients
A small sweet potato -around 100 g
2 large eggs
1 small egg
¼ tsp Ground coriander
¼ tsp Cumin powder
1 cup crushed tomatoes
1 tbsp lime juice
Mushrooms (optional)
½ cup Rocket or mixed greens
Bit of coriander, fresh (optional)
Method
Peel and grate the sweet potato, and add half of the two spices. Add the small egg or whisk and add half the egg.

Mix these ingredients, and season with salt and pepper.
Heat some oil in a frypan over medium heat, divide the sweet potato mixture in half, and put in the frypan

With a spatula, flatten this to a thin layer.

Pancake cooking
Cook about 5 minutes on each side.

Put a bit of oil in same pan, and add the balance of the two spices and cook for about 15 seconds, and then add the mushrooms, cut finely, and the crushed tomatoes.

Cooking tomato sauce
Lower the heat when boiling and simmer for about 5 minutes. Set this sauce aside in a bowl.
Wipe the bowl and fry two eggs -I did them easy over but any way is OK.
Put a pancake on each plate.

Add a friend egg on top of the pancake.

Place the egg on top
Place some of the sauce on top of the egg.

Add the rocket or whatever you are using -I added a bit of fresh coriander also, and used lettuce cut up, as I did not have any rocket, but rocket would have been my choice of flavours with this pancake.
