Sweet Potato Pumpkin Beetroot Tapas

Small plates of vegetables topped with smooth cheese and salty dukkah are my idea of heaven. Throw in a nice prosecco and some crusty bread and I am one happy girl.



Preparation Time: 10 minutes
Cooking Time: 40 minutes
Makes: 4 tapas servings

Ingredients
2 beetroots
1/4 pumpkin
1 medium sweet potato
2 tbsp danish feta
2 tbsp [linkhttp://recipeyum.com.au/chilli-sesame-dukka/?like=1 dukka]
5 basil leaves
2 tbsp olive oil



Method
  • Peel the potato, beets and pumpkin and chop into bit sized chunks. Tumble onto a lined baking tray and dribble with olive oil.



  • Roast in the oven for 35-40 minutes stirring at the 20 minute mark.



  • Once roasted pour into a serving dish.

  • Top with finely chopped basil, feta, [linkhttp://recipeyum.com.au/chilli-sesame-dukka/?like=1 dukka] and seasoning.



  • Enjoy hot as part of a tapas feast.
