Sweet Potato Salad

Sweet potatoes are my favourite kind of potato, rich is fibre, high in potassium, vitamin A and C and beta-carotene, which is good for your eyes. If those weren't enough reasons to eat sweet potatoes I've made a delicious salad that is great as a small meal, or side dish for two people.



Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 1/2 servings

Ingredients
Black pepper
1 knob of butter
Half a red pepper
Half 1 sweet potato
A handful of kale sprigs
Crumbled Goat's cheese

Method
  • Peel and chop the sweet potato and red pepper.



  • Set the red pepper aside and place the sweet potato chunks in a saucepan of boiling water for 20 minutes.



  • Wash the kale and rub it with olive oil, to soften the raw leaves. Place in a bowl.

  • Add the chopped raw red pepper to the kale leaves and season with a knob of butter and black pepper.

  • Drain the sweet potato and add to the bowl of veggies.



  • Finally crumble over the Goat's Cheese and enjoy.
