Sweet Potato Salmon Croquettes
Croquettes are named after "croquer" the French meaning for "to crunch". These delicious parcels do just that when you bite into them! Sweet potato is a nice change from the regular potato croquette and the lemony dressing blends perfectly with the salmon.

Cooking Time: 30 minutes
Makes: 18 croquettes
Ingredients
Croquettes
2 medium sweet potatoes
1 x 415g can red salmon
3 shallots
Handful of flat leaf parsley
1/3 cup flour
2 eggs - lightly whisked
3/4 cup breadcrumbs
Vegetable oil for frying
Dressing
1/3 cup mayonnaise
1 tsp finely grated lemon rind
1 tsp fresh lemon juice
Seasoning
Method
Combine the mayonnaise, lemon rind, seasoning and lemon juice in a small bowl. Set aside for the flavours to develop.
Zesty dressing.
Meanwhile, peal and chop the sweet potato into small pieces. Boil until tender, drain, and allow to cool. Once cooled mash and season with salt and pepper.
Add drained salmon, chopped parsley and chopped shallot to the sweet potato and stir to combine. Roll sweet potato mix into 18 ovals.
Place the flour, egg and breadcrumbs in 3 separate bowls.
Roll each croquette in flour, dip in the egg, then roll in the breadcrumbs.
Ready to be baked.
Once coated either place in a hot oven and bake for 20 minutes for a healthier version OR pour oil into a fry pan on medium heat for a golden option.
Sizzling Away
If baking turn over after ten mins. If frying turn when each side is golden.

Serve hot with the lemon mayonnaise and a simple salad.
