Sweet Potato Tarts

Perfect for before or after any meal, these sweet treats can be your appetizer or dessert.

Preparation Time: 1 hour
Cooking Time: 35 minutes
Makes: 22-24

Ingredients
Crust
2 cups flour
2/3 cup shortening
5-6 tablespoons cold water
dash of salt

Filing
1 large sweet potato (boiled and mashed)
3/4 cup brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
2 eggs
1 tsp vanilla
1 cup evaporated milk
pinch of salt

Method
  • Peel sweet potato and place it in pot with water to boil.

  • In a bowl add brown sugar, cinnamon, nutmeg, and salt and whisk the ingredients together to make the dry mix.

  • When the potatoes have boiled, strain the water and mash the sweet potatoes.

  • Add the mashed sweet potato to the dry mix and add eggs, vanilla, evaporated milk and mix the ingredients together to create the filling. Set the mixture aside.


  • In a separate bowl mix flour and shortening together.

  • Add water and salt to the mixture, and mix together.

  • Using your hands, ball the dough together.

  • Sprinkle flour on a countertop or flat surface and, place the ball of dough on the flour.

  • Using a rolling pin, flatten the dough entirely.


  • Section off circles of the flattened dough using a large mug and lay the circles into the baking pan.

  • Add the filling mixture into each bit of crust in the baking pan.


  • Bake at 204 for 15 minutes, then lower temperature to 176 degrees for 20 minutes.
