Sweet Pumpkin Soup

Pumpkin soup is a delicious, comforting dish to have on cold winter nights. You will be warm and satisfied after eating this lovely, healthy dish.

Preparation Time: 30 minutes
Cooking Time: 90 minutes
Serves: 4



Ingredients
500 grams of pumpkin cut into chunks
200 grams sweet potato diced
1 carrot diced
1 celery stalk sliced
1 small brown onion sliced
1 teaspoon minced garlic
3 1/2 cups vegetable stock
1/2 teaspoon ground nutmeg
3 - 4 bacon shortcuts diced
2 tablespoons olive oil
salt and pepper to taste

Method
  • Heat 1/2 of the oil in a large pot to a medium - high heat. Add the carrot, celery and onion. Saute until softened then put in the pumpkin, sweet potato and garlic. Cook for 2 minutes.



  • Pour in the stock and simmer for 40 - 50 minutes until vegetables are very tender. Remove from heat and allow to cool slightly.
  • Puree with a stick blender or put into a liquidiser. Return to a low heat, add the nutmeg and season. Simmer gently for 10 - 15 minutes until thick.



  • Meanwhile, heat the remaining oil in a pan to a high heat. Cook the bacon in the pan until brown, set aside.
  • Ladle soup into bowls and sprinkle with bacon pieces to serve.
