Sweet Roasted Rice Balls
This is my grandmother's recipe. She used to make these sweet rice balls in large quantities during the vacation time and we all loved it.
I have tested it, messed it up, tried again and finally perfected it since I wanted to recreate the exact taste of that sweet rice balls my grandmother used to make.
Adjust the amount of jaggery according to your taste.
Preparation Time: 40 minutes
Cooking Time: 30 minutes
Makes: 20 rice balls
Ingredients
1.5 cup parboiled brown rice
1 cup grated coconut
1.5 cup jaggery powder
1 cup water
4 cardamom
1 tbsp ghee
Method
Grind the cardamom into a fine powder. You can also use cardamom powder.
Wash and drain the rice using a colander. Let it sit for 10 minutes to remove any excess water.
Heat a pan on medium flame. Roast the drained rice. After 10-15 minutes, the rice will start to pop up. Lower the flame and continue roasting until all rice pops and become a light brown colour.
Remove from heat and let it cool. Then ground the roasted rice into a fine powder in a mixer. You can store it in a container and can be used later.
Mix the jaggery powder with water. Bring to boil and reduce the flame to medium.Continue boiling with occasional stirring until a thick syrup is made. Always make more syrup than what you will need.
Mix the grated coconut and syrup. Cook for 2 minutes and remove from heat.
Add the cardamom powder, ground rice powder and ghee. Mix well with a wooden spoon or spatula while hot so that the flavour will be well combined.
You should get a crumbled soft dough. If you feel like the dough is hard, add a little jaggery syrup and mix again. If it looks watery, add the roasted rice powder.
While warm enough to handle, take a little mixture in your palm and press gently to make small lemon size balls.
The sweet rice balls are ready. Store in an air-tight container. This will stay fresh for up to 3 days.
