Tabouleh
is healthy refreshing salad to go with almost any meal. It's Great as a sandwich filler and real winner at BBQ's
Preparation Time: 30 minutes
Cooking Time: 2-3 hours maceration
Makes:6 servings
Ingredients
3 cups chopped parsley
4 tablespoons cracked wheat
1 large chopped tomato
1 large sliced salad onion
Juice of 1 large lemon
salt to taste
Approx 1/3 cup virgin olive oil
Method
Wash wheat. Soak approx 5-10mins.
Combine parsley, tomato, onion in large bowl.
Add wheat and mix.
Add lemon juice,salt and oil. Mix well.
Allow to macerate for 2-3 hours. Mix occasionally. Taste. Adjust items in previous step accordingly.
