Tabouli Couscous Version

This is a simple, healthy recipe for tabouli that uses couscous instead of cracked wheat. It makes a great side (especially with chicken or lamb) and is also a delicious addition to sandwiches and rolls.



Preparation Time: 15-20 minutes
Makes: 4 servings

Ingredients
1 bunch parsley
A handful mint leaves
1 tomato
2 shallots
1/3 cup cooked couscous
Tbls white vinegar
Tbls olive oil (add more if desired)
Juice of one lemon
Pepper, to taste



Method
  • Prepare the couscous and leave aside to cool.
  • Prepare the other ingredients: roughly chop the parsley and mint into quite small pieces, finely dice the tomato and thinly slice and then roughly chop the shallots.



  • Place these ingredients in a large bowl. Add the couscous, the vinegar, the oil, the lemon juice and a dash of pepper. Mix and transfer to a serving bowl.
