Tamarillo Creme Brulee
Tamarillos are a tart fruit with a hard skin, and soft flesh inside. They're also called a tree tomato, and the taste is something between tomato, passionfruit, and papaya. The tamarillos give this traditional crème brûlée a fruity twist.
You can easily substitute the tamarillos for a variety of other fruits.
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Makes: 3 servings
Ingredients
5 tamarillos (or 10 small tamarillos)
50g caster suguar
3 egg yolks
60g sugar
250ml cream
1 vanilla pod
Method
Slice the tamarillos in half lengthways, and scoop out the flesh.
Place tamarillo flesh and 50g caster sugar in a small saucepan. Cook on a low heat until the mixture thickens and becomes a deep red colour. Leave aside to cool.
Preheat your oven to 150ºC.
Add the cream to a small saucepan. Slice vanilla bean and scrape the seeds into the cream. Bring the cream to a simmer with the vanilla bean pod.
Meanwhile combine the egg yolks with the 60g caster sugar. Whisk till combined.
Once the cream has is heated add a small amount of the hot cream mix to the egg yolks, then add the egg yolks to your cream. Whisk until well combined.
Add the tamarillo mix to the bottom of each of your ramekins, then top with the custard.
Put the ramekins in a heatproof dish, and fill the dish with water so that it comes half way up the ramekins. Lift up the ramekins and then place them back in the dish.
Place in the oven for 30 minutes, or until set. Then cool in the refrigerator.
Once the brûlées have cooled, scatter a layer of caster sugar on top. Use a blow torch to caramelise the sugar, and let it form a hard shell over the top.
The brûlées are not ready to serve and enjoy.
