Tandoori Chicken Biryani

Tandoori Biryani is yet another version of Biryani, using tandoori spice instead of the classical Biryani spice. This yummy and colourful recipe has a spicy and tangy taste which lingers in your mouth even after relishing it.

Preparation Time: 30-45 minutes
Cooking Time: 45 minutes
Makes: 5 servings

500 g chicken drumsticks
3-4 tbsp tandoori spice
juice of 1/2 a lemon
1 cup natural yogurt
1 onion
2 tbsp tomato puree
1 tbsp ginger-garlic paste
2 finely grated onions, fried until golden brown and drained
2 potatoes cut lengthwise, fried and drained
2 cups of rice washed and soaked in 2 1/2 cups of water
1 cup of mixed vegetables (carrots, peas, beans, maize)
1 piece of cinnamon
2 cloves
2 cardamoms
1 tsp whole cumin seeds
a few strands of saffron soaked in half cup of water
2 tbsp ghee or olive oil
salt to taste


Wash and clean chicken pieces and marinate in yogurt, tandoori spice, ginger-garlic paste lemon juice and salt.

In a blender, crush 1 onion and add to marinade with tomato puree. Leave to stand for 24 hours for best result but 2 hours is enough if you are in a hurry.

Meanwhile, heat your ghee/oil in a saucepan, add whole spices and stir for a few seconds until spices start to pop. Quickly, add your rice with the water in which it was soaked and bring to boil. As soon as the rice starts boiling, take off heat.

Grease the base of your saucepan, in which you will be cooking your biryani (It needs to be a big one since you will be cooking the chicken and rice together), add your marinated chicken with its marinade. Sprinkle with half of the fried onions.

Cover with a first layer of half-boiled rice.

Now, add the fried potatoes and the mixed veggies]

Cover with the remaining rice, sprinkle with the remaining fried onions and soaked saffron strands.

When all layers done, it should look like this

Seal your saucepan tightly and leave to simmer gently on low heat for 45 minutes until no water is left at the base. You can check this by inserting the handle of a serving spoon in the middle of the casserole. When touching the base, you should make sure that no water is left.

Serve hot with salad.
