This recipe is for one of our Hubgarden regulars (who shall not be named) as she has never made a whole chicken for fear it will not work out!
I have covered this in a tandoori type paste, and left it overnight soaking to soak up the tastes.
I have teamed it with some baked potatoes and a salad of partly cooked broccoli with sunflower and raisins.
Preparation Time: 10 minutes plus standing overnight
Cooking Time: 1 hr 30 minutes
Makes: 4 servings
Ingredients
1 Macro whole chicken (or any free range)
1 tsp garam masala
4 tbsp natural yoghurt
4 tbsp cream
2 tbsp hot-medium paprika powder
1 tsp chili powder
1 tsp cumin
2 tbsp oil
2 tbsp lemon juice
1 tsp salt
½ tsp turmeric
1 tbsp tomato puree
3 garlic cloves, crushed
1 tsp ginger
4 - 6 potatoes (optional)
Vegetables (optional)
For the Broccoli salad
½ broccoli
¼ cup raisins
½ cup sunflower seeds
1 small shallot
½ cup mayonnaise
Bit of wasabi mayonnaise (optional
¼ cup sugar
1 tbsp vinegar
Method
With a knife, prick the chicken all over, and make a few slits about 2 cm long on the skin.
Mix all the rest of the ingredients into a smooth paste.
Rub a lot of this over the chicken.

There will be some paste left over
Cover and put in the fridge for 8 hours, or if possible, overnight.
For the broccoli salad
Microwave the broccoli for about a minute (optional) - I like it slightly cooked. Allow to cool before cutting into smaller florets.
Add the raisins, sunflower seeds, and onion and toss to mix.
Mix the mayo, sugar and vinegar and add this dressing to the broccoli mix.
Let it stand for up to an hour if possible, or it can be made a day ahead.
For the chicken
Par cook the potatoes in the microwave for a minute or two, and cut into pieces.
Preheat the oven to 180°/160° fan forced.
Put a bit of oil in an ovenproof dish, add the chicken and potatoes and cover with foil.

Use toothpicks so the foil does not stick to the chicken
Bake for about ¾ of an hour, take it out of the oven, and baste with a little of the left over marinade.
Put the chicken back in the oven and bake a further ¾ hour or until the chicken is done.
Take out of the oven and rest for about 5 - 10 minutes, carve and slice.
