Tangy Lemon Tart

A deliciously tasty, tangy, lemon tart is always a hit and this dessert looks spectacular with a dusting of icing sugar.

Preparation Time: 10 minutes
Cooking Time: 50 minutes
Serves: 8

Ingredients
1 sheet frozen puff pastry, thawed
1/2 cup sugar
1/2 cup lemon juice
1/2 cup cream
4 eggs
icing sugar, for dusting

Method
  • Preheat oven to 180C and grease a large pie dish.
  • Line the pie dish with the pastry. Lay a sheet of baking paper over the top of the pastry and fill it with rice or pastry weights and blind bake for 15 minutes.
  • Remove the weights and bake for a further 5 minutes.

  • Meanwhile, mix together the eggs, sugar, juice and cream. Pour the mixture into the tart shell.

  • Bake for 30 - 35 minutes until just set and still a bit wobbly.
  • Cool in pan.
  • Dust with icing sugar before serving.
