Tapioca and Mangoes with Almond Milk
I discovered tapioca just a month or so ago, and find it quite versatile. I love mangoes and have done a few other recipes using them as they are now plentiful in the shops.
This dessert is not very sweet and does not have a lot of added sugar.
Preparation Time: 10 minutes plus ¾ hour standing time
Cooking Time: 10 minutes
Makes: 4 servings
Ingredients
100 g tapioca
2 ripe mangoes

1 l water
45 g sugar
Method
Soak the tapioca in water for about ¾ hour. Drain the water.
Boil the litre of water and then add the tapioca and sugar.
Cook for about 10 minutes or less if the tapioca turns transparent, from white.
If it is too thick, add some almond milk, however note you will add the rest of the almond milk when cool. Let it cool.
Mix in the almond milk, and adjust the amount if needed.
Chop the mangoes up, or you could use a food processor and blend it, and add to the tapioca.
Put in the fridge for a while and serve cold.
