Tapioca and Mangoes with Almond Milk

I discovered tapioca just a month or so ago, and find it quite versatile. I love mangoes and have done a few other recipes using them as they are now plentiful in the shops.

This dessert is not very sweet and does not have a lot of added sugar.

Preparation Time: 10 minutes plus ¾ hour standing time
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
100 g tapioca
2 ripe mangoes
¼ cup [link http://recipeyum.com.au/make-your-own-dairy-free-almond-milk/ almond milk]
1 l water
45 g sugar

Method
  • Soak the tapioca in water for about ¾ hour. Drain the water.

  • Boil the litre of water and then add the tapioca and sugar.

  • Cook for about 10 minutes or less if the tapioca turns transparent, from white.

  • If it is too thick, add some almond milk, however note you will add the rest of the almond milk when cool. Let it cool.


  • Mix in the almond milk, and adjust the amount if needed.


  • Chop the mangoes up, or you could use a food processor and blend it, and add to the tapioca.


  • Put in the fridge for a while and serve cold.
