Tasty Fried Rice

Fried rice can be served as a side dish or as a complete meal. It's a family favourite in most households and is a great way to get your children to eat some extra vegetables.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 6

Ingredients
2 1/2 cups uncooked white rice, cooked and cooled
2 eggs, whisked
100 g bacon, diced
1/2 onion, diced
1 carrot, sliced or diced
1/2 cup peas and/or corn
1-2 cups mixed vegetables
2-3 tbs soy sauce
oil for frying

Method
  • In a large frying pan or wok, heat the oil to a medium heat. Pour the egg into a pan and spread it around like a very thin omelette. Once the egg is cooked, roll the egg up like a cigar and remove it from the pan. Set aside.

  • Add the bacon and vegetables to the pan and cook, stirring, for 5 minutes until lightly cooked.

  • Add the rice to the pan and cook for 5 minutes, stirring occasionally, until the rice is heated through.

  • Add the soy sauce to the pan and mix until well combined.
  • Slice the egg finely and add it to the pan. Mix thoroughly.

  • Serve immediately.
