Tasty Tuna Patties

I experimented with this recipe last night, and it turned out tastier than the usual tuna/potato combination that most people use for tuna patties. It's a great way to get my brother to eat his vegetables, and you could try it with different combinations, like zucchini or capsicum instead of carrot and celery.

Preparation Time: 25 minutes.
Cooking Time: 15 minutes.
Makes: 20 patties.

1 can of tuna in spring water (drained)
3 tbsp olive oil
1 cup of finely grated carrot
1 cup of finely chopped or processed celery
1 large onion, finely chopped
1 cup of breadcrumbs
4 eggs


  • Grate the carrot into fine pieces.

  • Get grating.

  • Chop onion and celery into small pieces, roughly the same size. I used a little food-chopper to do this which saves a lot of time and produces an even consistency.

  • Chopping, chopping...

    And more chopping.

  • Sauté your chopped vegetables in 1 tbsp of olive oil, until the are cooked and soft.

  • Dont make my mistake use a big frypan.

  • Drain any juices and set aside to cool a little.

  • Mix tuna and eggs.

  • In the same bowl, mix in your cooked vegetables.

  • Add breadcrumbs as needed to make the mixture the right texture. If mix is too dry, you can add a little water or milk. If mix is too wet, add more breadcrumbs.

  • Roll the mixture into small patties, about a tablespoon for each one. Don't worry if the mixture is very soft- it will become firmer once cooked. Coat with remaining breadcrumbs.

  • Place patties in a large frypan with the remaining olive oil and cook each side until golden brown.

  • Veggie tuna patties, get em while theyre hot.

    There you have it; an easy, healthy recipe for tuna patties that includes a serving of vegetables. Next time, I think I'm going to add a little bit of grated cheese into the mix and see how that turns out- or you could try it for me and let me know how it goes.
