Tasty Tuna Patties
I experimented with this recipe last night, and it turned out tastier than the usual tuna/potato combination that most people use for tuna patties. It's a great way to get my brother to eat his vegetables, and you could try it with different combinations, like zucchini or capsicum instead of carrot and celery.
Preparation Time: 25 minutes.
Cooking Time: 15 minutes.
Makes: 20 patties.
Ingredients
1 can of tuna in spring water (drained)
3 tbsp olive oil
1 cup of finely grated carrot
1 cup of finely chopped or processed celery
1 large onion, finely chopped
1 cup of breadcrumbs
4 eggs
Method
Grate the carrot into fine pieces.
Get grating.
Chop onion and celery into small pieces, roughly the same size. I used a little food-chopper to do this which saves a lot of time and produces an even consistency.

Sauté your chopped vegetables in 1 tbsp of olive oil, until the are cooked and soft.
Dont make my mistake use a big frypan.
Drain any juices and set aside to cool a little.
Mix tuna and eggs.
In the same bowl, mix in your cooked vegetables.
Add breadcrumbs as needed to make the mixture the right texture. If mix is too dry, you can add a little water or milk. If mix is too wet, add more breadcrumbs.
Roll the mixture into small patties, about a tablespoon for each one. Don't worry if the mixture is very soft- it will become firmer once cooked. Coat with remaining breadcrumbs.
Place patties in a large frypan with the remaining olive oil and cook each side until golden brown.
Veggie tuna patties, get em while theyre hot.
There you have it; an easy, healthy recipe for tuna patties that includes a serving of vegetables. Next time, I think I'm going to add a little bit of grated cheese into the mix and see how that turns out- or you could try it for me and let me know how it goes.
