Teriyaki Chicken Ball Skewers Bento

A delicious easy Japanese-inspired bento of chicken meatball with homemade teriyaki sauce. Perfect for picnic lunch or dinner bento for the family and kids.



Preparation Time: 30 minutes
Cooking Time: 40 minutes
Makes: 4 servings

Ingredients
Meatballs
500g chicken mince
1 onion, finely chopped
1 spring onion, finely chopped
1 egg white
1 tbsp soy sauce
3/4 tsp salt
1 cube chicken stock
1 tbsp cornflour
1 tbsp water

Teriyaki Sauce
3 tbsp soy sauce
4 tbsp water
1 1/2 tbsp cooking sake
1 1/2 tbsp mirin
2 tbsp sugar
5cm onion, finely grated
5cm ginger, finely grated

Salad
1/4 purple cabbage, finely shredded
goma salad dressing

cooked Japanese rice, to serve

Method
  • In a bowl, mix all the chicken meatballs ingredients. Leave to marinade for 1 hour.



  • Preheat the oven to 200C fan-grill.

  • Roll a tablespoon of the chicken mixture into a ball. Repeat until the mixture is finished.



  • Grill the chicken meatballs in the preheated oven for 30 minutes, turning occassionally, until browned all over.



  • Make the teriyaki sauce: Mix all the ingredients in a pan, cook, stirring, until sugar has dissolved and mixture is thickened.

  • Add in the grilled meatballs into the sauce. Toss to coat.



  • Serve chicken meatballs in a skewer with rice and cabbage salad drizzled with goma dressing.
