Thai Chicken Larb With Lemongrass, Mint And Coriander

Thai Chicken Larb in lettuce
Serve Thai chicken larb in lettuce leaves as a moorish savoury meal

Moorish, quick and easy to make this Thai chicken larb is delicious and tastes just like the first one I had in Phuket while visiting family. I love the combination of the lemongrass, ginger, fresh coriander and mint. Traditionally this meal uses lime but I love adding lemon if limes are not readily available.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 4

1 tbsp oil
1 1/2 tbsp fresh finely grated ginger
2 cloves garlic, crushed (exclude for low FODMAP)
Lemongrass, pale section only
2 Birdseye chilli, finely chopped
500 g chicken mince
1 large lemon, finely zested and juiced (or lime)
2 tbsp fish sauce
1 tbsp raw sugar or palm sugar
1 cup coriander, roughly chopped
1 cup mint, roughly chopped
12 iceberg or cos lettuce leaves
Jasmine rice, to serve

Zest and juice the lemon. Set aside.
Finely cut the white section of the lemongrass and finely grate the ginger.

Preheat a frypan on high for one minute. Add the oil, garlic, lemongrass, ginger and chilli and fry for 1 minute.
Add the chicken mince and fry, breaking the mince into small chunks as it cooks.
Once the chicken is white and cooked, add the lemon zest, juice, sugar and fish sauce. Stir fry until the sugar has dissolved, around 1 minute.
Add the coriander and mint and stir fry for 1 minute, until the leaves wilt and remove from heat.

The coriander and mint leaves will slightly wilt when the larb is ready

Spoon the larb into lettuce leaves and top with chilli (optional).
Serve with jasmine rice.

Serve with roasted peanuts for extra crunch.
Make this family friendly by serving the chilli on top for only those who want.
