Thai Chili Beef Noodles
These are very easy to make, are quick, and have a delicious flavour.
Vary the amount of chili you put in to suit your taste - measurements are low to medium hot in this recipe.
Preparation Time: 15 minutes, plus 1 hour marinating
Cooking Time: 10 minutes
Serves: 2
Ingredients
250 g sirloin steak, cut into thin strips
About 85 g rice stick noodles
1 tbsp oil
Lemongrass, to taste
Small handful of coriander, chopped
For the marinade
1½ tbsp soy sauce
2 cloves garlic
Ginger, to taste
¾ tbsp fish sauce
2 small chilies, finely chopped
Juice of ¾ lime
1½ tsp oil
Method
Put all the ingredients for the marinade into a food processor or blender.
Process until smooth. If you are using jars of spices, you do not need to process, but just mix up thoroughly.
Transfer this to a shallow bowl and add the steak.
Turn the steak till it is all coated with the marinade and leave for about an hour.
Cook, or soak the noodles, as per packet instructions, then drain and rinse under cold water.
Heat a wok until it is hot and add the oil.
Add the lemongrass, followed by the beef and marinade.
Stir fry this for 1 to 2 minutes - NO MORE.
Add the cooked noodles and toss until they are heated through.
Season to taste with salt and pepper, and serve, sprinkled with the chopped coriander.
