Thai Chilli Squid Rings with Potato and Cheese Pancake

I have rarely made squid at home, and after this recipe, I will be doing it more often!
When you eat out, they often cook the squid too long and they are tough, but these are lovely and soft and the potato and cheese pancake worked very well as an accompaniment.
The pancake could also be served as a meal on its own, with a tossed salad or vegetables.
Preparation Time: 30 minutes
Cooking Time: 20 minutes
Makes: 3 servings
Ingredients
350 g Squid rings
¼ to ½ tsp each of the following for marinade:
Coriander, garlic, onion, salt, sugar, capsicum, cumin, tumeric,mint, ginger, lemongrass, lemon juice, oil
½ - ¾ tsp chilli
450 g potatoes, grated
1 egg, lightly beaten
1 onion, grated
1 tbsp flour
1 tsp finely chopped coriander
40 g grated cheese
1 tbsp olive oil
2 tbsp natural yoghurt (optional)
Method
First cut up the marinade ingredients so they are minute or chop them in a blender.
Then add the squid and leave to marinate for a while -I left it overnight but you need to make sure squid is fresh for this.
Rinse the potatoes in a colander under cold running water, then turn onto a clean tea towel and pat dry.
Place potatoes, egg, onion, flour, coriander, cheese and some black pepper to taste in a bowl.

Mix to combine.
Heat oil in a large nonstick frying pan over a medium heat, spread the potato over the base of the pan.

Cook for about 15 minutes, and then place on a tray ready to grill for about 10 minutes.
Ready to put under a medium grill
When the top is golden and pancake is cooked through, take out, cut into wedges and serve, topped with yoghurt if desired.

Meanwhile a few minutes before this pancake is done, heat some oil and cook the squid for 2 - 3 minutes ONLY.
Put on plates, add cut pancake and serve.
