Thai Egg Fried Rice

Thai is the only Asian cuisine I'm a fan of, so when a friend of mine offered to show me how to make traditional Thai egg fried rice I couldn't resist. The result is a bowl of delicious rice that packs an East Asian punch.

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 3 servings

Ingredients
100g rice
2 eggs
2 garlic cloves
Handful basil
2 onions
1 green chilli pepper
1 red chilli pepper
1 lime
2 Tblsp fish sauce



Method
  • Finely slice the vegetables to equal sizes.



  • Add the basil, garlic cloves and spices to a pestle and mortar and grind.



  • A paste should begin to form.



  • Wash the rice and place in a saucepan of boiling water, turn to simmer and cover for 20 minutes.

  • Place the onions, chilli peppers and seasoning in a frying pan. Cook over a low heat for 10 minutes.


  • Add the fried vegetables to the rice, stir and cover with the lid for the last 5 minutes.



  • Crack an egg into the rice, stir once and cover with the lid for 3 minutes.

  • Serve with a garnish of chopped spring onions.
