Thai Pineapple Fried Rice

This Thai pineapple fried rice is delicious with sweet caramelised pineapple. It is good to serve alone or accompany with stir fried tofu, prawns, chicken or beef.

Cooking Time: 25 minutes
Serves: 4
Ingredients
1 cup fresh pineapple, cut
2 cups cooked rice (preferably cooked the day before)
2 eggs, beaten
1 red capsicum, diced
1 carrot, diced
2 cloves garlic, finely chopped
1 birdseye chilli, finely chopped
1 tbsp soy sauce (gluten free if required)
1 tbsp fish sauce (exclude for vegetarians and add 1 extra tbsp soy sauce)
1 tbsp palm or raw sugar
1 tbsp oil
1 lime, zested and juiced
Coriander leaves, to garnish (optional)
Method
Add the soy sauce, fish sauce, sugar, lime juice and zest in a bowl and stir to combine until the sugar is dissolved. Set aside.
Heat a frying pan on high. Stir fry the egg until it has a slightly browned surface. Transfer to a bowl.

Add the oil, garlic and chilli and stir fry for 1 minute.
Stir fry the pineapple for 2 - 3 minutes, until caramelised. Add the capsicum and stir fry for 1 minute. Add the carrot and stir fry for 1 minute. Transfer to a bowl.

Add the rice to the frying pan, continually stirring for 1 minute to heat through. Stir in the egg, pineapple and vegetable mixture. Add the combined sauce and stir for 1 minute.
Garnish with coriander leaves. Serve.
