I love Thai red curry and I always make it with vegetables. I decided the other day to try it with fish and I really liked it. You can use any fish you like, but mullet was what I had on hand.
Served along side some rice makes for a nice meal
Preparation Time: 15 minutes
Cooking Time: 15-20
Makes: Serving for two
Ingredients 3 tablespoons of red curry paste
1 can of coconut cream (440 ml can)
1 teaspoon of garlic
1 large piece of mullet fish
1 large carrot thinly sliced
1 handful of green beans
2 handfuls of broccoli
1 finely diced white onion
In a fry pan add curry paste, onions and and garlic and sauté until onions are soft.
Add in coconut cream and mix through to combine.
Bring to the boil and turn down to low adding in the fish.
Add in the fish
Cover the fish with sauce and add all other in vegetables and mix in to cost vegetables with sauce.
Add in all the vegetables
Cook for 10-15 minutes until the fish is cooked.
Meanwhile cook rice according to packet instructions. Usually when the water dries up it is ready, make sure to taste it to check if it's cooked.
Remove fish from the curry sauce and use tongs to pull off the skin.
Break up fish into smaller pieces and add back into the curry sauce.
Place rice into a ramekin and press down, turn out into the bowl and take off the ramekin.
Add a generous serve of curry sauce, fish and vegetables along side.
